Original Cicoria Pizza

Cicoria Pazza recipe
What did the ancient Hernici from the province of Frosinone eat?
Well. we have a handbook of over 50 recipes from the Ciociaria, from omelette with sausages to mutton with cloves and and 'small sized spaghetti with sauce of chicken giblets'.
But they may have also enjoyed 'Mad Chicory' or 'Cicoria Pazza'.
Ingredients
1kg chicory, 1 hot chilli without seeds, 2 cloves garlic, 4 tablespoons oil, salt.
Making it
Clean and wash the chicory in several changes of water.
Cook it in plenty of slightly salted water for about 45mins.
Drain and squeeze it.
In a frying pan pour the oil and saute the cloves of garlic, the chilli pepper and the chicory adding a pinch of salt.
