Etruscan Beef Dish...Delicious


The Etruscans actually prepared this dish with wild boar.
Today, our taste buds have got used to less strong flavors in every day cooking and we suggest the use of ordianry minced beef.
This dish was kindly sent to us by the Ristorante Villa Gambara, Bagnaia, in the province of Viterbo.
Ingredients
minced beef, extra virgin olive oil, onion, celery, garlic, laurel leaves, salt, peperoncino, red wine
Making it
Fry the chopped onion in the olive oil along with 4 or 5 cloves of garlic and chopped celery.
Cut the mince into portions and place in the pan.
Cook slowly for 30 mins and throw in 6 laurel leaves.
Add a liter of good red wine, salt and peperoncino and cook further.
Some add a touch of stock for added flavour, but the mixture should be on the flame to form a fantastic sauce and eaten hot.
