Facioli alla Sutrina
Taken from the brochure of the 'Sagra del Fagiolo' by the Pro Loco of the ancient Etruscan city of Sutri.
Ingredients
fagioli, lardo, onion, peperoncino, basil leaf, celery, tomatoes, beef slices.
making it
First fry a small piece of lardo or fat with the chopped onion, peperoncino, the basil leaf and the chopped stick of celery.
Add the beef slices or steaks.
Chop the tomatoes and when the beef is cooked well enough add to them to the rest of the ingredients, together with the bolied beans.
Continue to cook until the juice has been reduced, then serve warm but not too hot.
