Ingredients for 4 people
1 box BARILLA Rigatoni
6 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
Salt and fresh ground pepper to taste
4 cups packed mixed lettuce pre-washed
½ cup sundried tomato
5 oz Blue cheese crumbled
1 cup almonds roasted and crushed

Preparation 20 minutes preparation + 15 minutes cooking
1. COMBINE oil and vinegar using a bowl
2. ADD salt and pepper to taste
3. COOK Barilla Rigatoni following the instructions on the box
4. DRAIN and toss with 1 tablespoon olive oil; place on sheet tray to cool down
5. COMBINE the lettuce leaves with the pasta, the tomatoes and the dressing, using a large bowl
6. SPRINKLE with the cheese and roasted nuts
7. SERVE immediately
