Coniglio all Cacciatora - Hunters Rabbit

Tuscan recipe called Coniglio alla Cacciatora (Hunter’s Rabbit). The preparation requires only 30 minutes and the cooking 2 hours.
Ingredients for 4 people:
- 1 rabbit weighting about 1 kg
- 500 grams of mushrooms
- 200 grams of peeled tomatoes
- 2 stalks of celery
- 400 grams of carrots
- 1 Onion
- 2 cloves of garlic
- half liter of red wine
- Rosemary
- 3 leaves of sage
- 2 bay leaves
- Extra Virgin Olive oil
- Red Chili Peppers
- 1 glass of white wine
- Vinegar
- Salt
Preparation:
Wash the rabbit with water and vinegar, then marinate it overnight in a saucepan with water, rosemary and white wine.
The following day, cut the rabbit in bite-size pieces, fry it with oil, garlic and finely chopped onion, until the meat has browned. Then add a pinch of salt. Chop the carrots and the celery and add it to the frying rabbit.
Simmer for about 20 minutes, and then add the sliced mushrooms and salt again. When the mushrooms have released all their water and this has evaporated, pour in the red wine and tomatoes. Add the bay leaves and sage and cook for about 1 hour. with the lid partially covering the meat. Towards the end of cooking, add a pinch of chili. Be aware of the cooking time, since it could take less than 1 hour if the rabbit pieces are small.
