Tuscan Stracciatella Soup....Delicious!

Ingredients (4 people):
4 Eggs, Nutmeg, MSG-free Vegetable
Stock for 4 people, Salt, Parmesan Cheese.
Preparation:
Set the vegetable stock to high heat. While you are heating the stock, open the eggs in a bowl, and mix them with 50 grams (0.1 pounds) of grated Parmesan cheese. It is impossible for me to get the cup measurement as I use a scale and have not measured the cheese in cups. I might guess half cup, but it’s a VERY wild guess. Add a pinch of nutmeg to the mix and continue mixing.
If the vegetable stock is not salted, add salt to taste. REMEMBER, the Parmesan cheese is salty!
When the stock is at boiling point, pour the mix of eggs and cheese in the stock while stirring with a whisk, then turn off the heat and wait for 5 minutes.
READY! The taste will be more like chicken stock, but you will have a healthy and hearty Tuscan soup ready in 10 minutes. Serve the Tuscan Stracciatella hot.
If you wish you may also prepare the vegetable stock yourself, it will take longer but you will have more control over the taste of your Stracciatella soup.
