Rib Eye Steaks Char-Grilled w/Buffalo Blue Cheese

Char-Grilled Rib-Eyes with Buffalo-Blue Cheese
Grilling the steaks at a higher temperature produces a mouthwatering crust. The slightly spicy blue cheese sauce gets its bite and pinkish hue from buffalo wing sauce.
1/2 cup refrigerated blue cheese dressing1/2 cup purchased buffalo wing sauce, divided1/4 cup crumbled blue cheese1/4 cup minced celery4 (6- to 8-oz.) beef rib-eye or sirloin steaks (1 inch thick)1 tablespoon canola oil1/2 teaspoon salt1/2 teaspoon pepper
1. Combine dressing, 1/4 cup of the wing sauce, cheese and celery in small bowl.
2. Heat grill or charcoal to high; reduce heat to medium-high.
Brush steaks with oil; sprinkle Eversons Mr. Pig and salt and pepper. Grill, covered, 3 to 4 minutes or until browned; turn. Brush with 2 tablespoons of the wing sauce; grill 3 to 4 minutes for medium-rare. Turn; brush with remaining 2 tablespoons wing sauce.

Serve steaks with blue cheese sauce. And a Glass of heavy Italian Cabernet
