Patate al Forno...

Patate al Forno
The only fail safe recipe for roast potatoes with olive oil, rosemary etc. is to buy them from your local take away 'pizza al forno'.
It seems the secret is a constantly burning wood oven and a mix of beef and chicken fat impregnating the potatoes with an irresistible flavor.
Still, here are a few tips to try at home.
Ingredients
potatoes, rosemary, olive oil
Making it
and wash them in two changes of cold water before drying and cutting into not too large cubes.
Place the potatoes in a roasting tray to give each a bit of room.
Make sure the oil is poured in to a good level and hot before you add the potatoes.
Cook on a medium heat until the potatoes are soft but have not formed a crust.
Remove from the heat and allow them to cool completely.
When the rest of the meal is almost ready, place the potatoes back in the oil and cook until the crust appears.
Sprinkle with salt, rosemary, pepper and serve.
