Penne with Mozzarella, Cherry Tomatoes and Basil


Penne with Mozzarella, Cherry Tomatoes and Basil (Penne con Mozzarella, Pomodorini e Basilico)

Ingredients
1 box BARILLA Penne
1/4 cup extra virgin olive oil, divided
2 cups (1 medium) red onion, thinly sliced
2 cups (1 pint) cherry tomatoes, cut in half
1-1/2 cups (8 ounces) fresh mozzarella cheese, diced
8 leaves fresh basil, thinly sliced
to taste freshly ground black pepper
1/3 cup Parmigiano cheese, freshly grated
BRING a large pot of water to a boil.
HEAT half20of the olive oil in a large skillet. Add onions and sauté over medium heat until soft.
ADD tomatoes to skillet and cook five minutes or until tomatoes are heated through.
COOK pasta according to package directions. Drain and toss with sauce.
ADD mozzarella cheese, basil and black pepper.
DRIZZLE with remaining oil. Sprinkle with Parmigiano cheese and serve
