Tuscan Bread Salad
Tuscan bread salad
SERVES 4

150g stale Tuscan bread or sourdough bread
6 ripe medium-sized tomatoes
1 red onion, thinly sliced
half a cucumber, halved lengthways and deseeded
1 sweet yellow pepper, deseeded, chopped
5 tbsp extra-virgin olive oil
4 tbsp white-wine vinegar
4 anchovy fillets
handful of basil, chopped coarsely
handful of mint, chopped coarsely
salt and pepper
Soak the stale bread in a bowl briefly (about 30 seconds) with the white-wine vinegar (squeeze out the vinegar if it becomes too soggy). Quarter the tomatoes, chop the cucumber and add to the bowl of bread and vinegar. Add the sliced red onion, yellow pepper and chopped herbs. Tear up the anchovy fillets and lay over the salad, drizzling the oil over the salad. Season generously and toss together
