Mike's Italian Potato Salad

6 slices of bacon diced
2 tbs. flour
1/2 cup sugar
2 tsp garlic salt
1 egg
1/2 cup sliced onion
1/3 tsp of pepper
1/4 cup vinegar
1 cup water
1/4 cup lemon juice
1 quart cooked potatoes diced
1/4 cup minced parsley
1 tsp. chopped celery
1/2 cup of chopped olives
1 clove garlic
In the hot bacon fat, stir in flour, sugar, salt and pepper and finely minced garlic.
Blend. Beat egg, add vinegar, water and lemon juice and add. Cook until thick. Add bacon, potatoes and all the other ingredients. Serve (hot or cold) You may want to add some white wine, if not have a glass of Pinot while your cooking....
