Baked scallops
Baked scallops with brandyRecipe by Le Burchio restaurant, Verona
SERVES 4
Preparation 5 minutes
Cooking 10-12 minutes
16 scallops in shells, washed
2 tbsp olive oil
2 tbsp brandy
2 tbsp fresh flat-leaf parsley, chopped
crusty bread to serve

Preheat the oven to 200ÂșC/Gas Mark 6.
Place the scallops on a baking tray. Drizzle each one with a little olive oil and a dash of brandy. Place in the oven for 10-12 minutes.
Arrange four scallops on each plate and sprinkle with a little chopped parsley.
Serve with some crusty bread to mop up the juices inside the shells.
