Roasted Vegetables w/Herbs

1 Butternut squash seeded and cut in chunks
8 medium potatoes, peeled and scrubbed and cut in halfs
2 red onions, peeled and in wedges
1 medium squash cut in small chunks
1 green 1 yellow peppers seeded and cut in chunks
9 halved garlic cloves
sea salt and freshly ground pepper
5 bay leaves
3 sprigs rosemary and thyme
4 teaspoons virgin olive
400 g can peeled plum Italian
tomatoes
Serves 4
Place vegetable in a medium roasting tin and season well w/seasalt and the ground pepper.
Scatter bay leaves, rosemary and thyme over contents.
Drizzle with olive oil and toss the veggies around so they are generously coated.
Place in a preheated gas oven at 350 for about 20 minutes. or until browned around the edges almost cooked.
Remove pan from overn and insert the tomatoes (plummed) in between the the vegetables. Slip pan back into oven for another 10 minutes, until the potatoes and suash are tender.
